Sorry for not answering sooner, been hanging around the lake instead of the computer.
I have a convection oven and I bake them at 350 for 13 minutes. I do use papers, which I spray with Pam. One other small thing, it uses a half block of cream cheese instead of the whole one that I said earlier.

Mmmmm. I just made this then after taking it out of the microwave I sliced it, buttered it, and toasted it in a frying pan. After getting it nice and brown and crispy I drizzled a bit of sugarfree syrup and WOW! Yummy Yummy Yummy!

Wow! Just tried this. It was great. Just like you said, like a whole grain kinda muffin/bread thing. I see alot of these in my future.

One warning: I put chunks of CC in there and was sooo hungry ate it right out of the microwave and... of course, burnt my tongue. So... It may seem obvious to others but watch out for that super heated CC!

Can't wait to try the savory version next.

I made this today but with a few changes:

2 T coconut oil
1 T Cream cheese
2 T golden flax meal
1 scoop of Allmax chocolate peanut butter protein powder
a little bit of baking powder

Nuked it all and then put some peanut butter on top. Very tasty but way too filling for one serving. Next time I will cut into 1/2 or thirds.

It just astounds me how many creative variations on this basic muffin there are. I like to add a bit more water to thin it down to pancake batter consistency. Makes WONDERFUL pancakes!

loves these, but made some adjustments and have been having these for breakfast for the last couple of weeks:

1 egg
1 table spoon ground hazelnut (or almond)
2 table spoons flax seed
1 tea spoon ground coconut
1 table spoon protein powder
2 table spoons coconut oil
1/2 tea spoon baking powder
good dash of cinnamon
4 drops banana flavour (I get this from here: http://www.myprotein.com/ie/products/flavdrops)
cream cheese

Mix everything up like the original recipe (excluding the cream cheese)

Nuke it in the microwave on high for 1 minute (I use a flat container, so the end result is more like a 1 inch thick slice of bread or cake)

Let it cool on a rack a little and then spread some cream cheese on top - yummy!!!

just a question im on induction is this something you can have everyday so long as it comes in under your total carb count for the day or should you only have it occationally. tanks

This is a hundred times better than the "One Minute Muffin" I made this morning...couldn't find this recipe until I remembered what it was called! The coconut oil and cream cheese make such a huge difference. Thanks for sharing :-)

WOW...I was looking for something different for breakfast instead of bacon and eggs.

This is outstanding and agree with the comment above...it is much better than the muffin-in-a-minute.

I added a bit of SF vanilla syrup to the end product. Think I'll try the pancake version one day as well.

This is a great recipe.... really really makes for a great Muffin Kinda experience.... tried it a couple of times making it only with Butter... but then I made it with coconut oil... now that's the bomb....YUMMMMM
