Hi Jonny:
Yes it does matter how many carbs and the type of carbs that are eaten. In Rick Gallop's books on The G.I. Diet he tells us to fill our plates 1/4 lean protein, 1/4 low g.i. carbs (like brown rice or noodles) and 1/2 veggies.
You will find many answers to your questions on the ongoing thread about the G.I. Diet found under semi-lowcarb plans:
http://forum.lowcarber.org/showthread.php?t=258064
called "GI diet support here".
You can read all the pages to get just about all the info you need and/or go to the last page and start posting. We would be happy to have you on board!
