Default What do I substitute for rice in stuffed peppers??

I have this recipe for stuffed peppers and was wondering what I should substitute for rice?? Do you think it would be good just leaving it out??

Stuffed peppers

4 med peppers
1/2 lb ground beef
1 1/2 c rice (WHAT HERE???...)
1- 8 oz can tomato sauce
1 onion, chopped or minced
1 c cheese, shredded
2 cloves garlic, chopped
2 tb worcestershire
2 tb ketchup
2 tb chopped parsley
1 tb olive oil
1/2 tsp ground cumin
1/2 tsp horseradish (will be omitting this...)
1/4 tsp black pepper

cook peppers, drain on paper towel
heat oil in skillet- add onion & garlic- cook 5 min.
add cumin- cool 2 min
add beef- cook 5 min
add tomato sauce, worcestershire, black peper, ketchup, horseradish, & salt- cook 6 min and remove from heat
stir in rice and cheese
spoon into peppers
top with parsley
bake in pan of 1" water at 350 degrees for 40 min

Yep! Add some more ground beef or sausage meat to replace the rice.

Or, you can use TVP.

Thanks! I'm making these tonight (- pepper shell) and I am just going to add a bit more cheese and beef. Next time I'll try sausage, that sounds yummy.

I use parmesan cheese, for kind of a "meatbally" flavour, and I throw in an egg to help hold it all together.

What about cauliflower that has been put through the food processor like you do for fried 'rice'? I haven't made that, so I'm not sure if that would work.

Just a thought...

I introduced my sister to LC and made the fried "rice" cauliflower and she loved it. She recently told me that she made stuffed peppers doing the cauliflower like rice and it was wonderful. Big hit in her home....so I'm sure this will work!

I put fresh diced mushrooms instead of rice in my stuffed peppers. And I put cheese in the bottom or in the middle as well as on top.

Okay....sounds yummy, think i can make it...BUT how do you cook peppers?!?!
