Default Bahamian Ceviche

1 fresh filet of a firm white fish, cut into bite sized pieces.
ie: snapper, dolphin (mahi mahi) or grouper
or 2 whole fresh conch, cleaned and cut into small chunks
1/2 medium purple onion sliced finely and then chopped into small bite size pieces
handful of cilantro or fresh parsley chopped fine
Juice of 2 whole limes
juice of 1/2 sour orange
sm garlic clove minced
salt and freshly cracked pepper
hot sauce to taste


combine fresh fish, onion, juice of limes and sour orange, and garlic. Put into a glass bowl or small glass casserole dish. Let "cook" for 1 hour.
add freshly chopped cilantro or fresh parsley and hot sauce to taste. Adjust seasonings.
Serve at room temperature.
