Hamburger patty with Italian seasoning, salt & pepper with. Thin slice of pepper jack cheese, lettuce and tomatoes.

I tried my hand at bacon-wrapped scallops last night. They came out pretty nicely. I think if you just cook them until the bacon is cooked, they're pretty idiot-proof.

Kinda stunk up the house, though... I think I'll be waiting until windows-open weather to try these again.

Kristine, oh yum! Did you use big scallops? How did you make them?

Tonight was Stuffed Portabella Mushrooms, sounded like a pretty pedestrian recipe until I made it... wowzers...the sauce alone is good enough to accompany steak for a holiday meal.... Like silk. Had butter, red wine, HC - and you braised the portobellos in it before the cream was added.
The "stuffed" part was a thawed pkg of spinach, herbs, cream cheese, then topped with Parm and Mozzarella, with the sauce poured around the mushrooms, and broiled.

I used (cheaper) small bay scallops. I cut the bacon in half. I put two scallops on a toothpick, and wrapped with a bacon half-slice. I baked them at 375 or 400F (I forget!) but I already had the oven on from making my other stuff. I just watched for the bacon to be cooked but not overcooked or crispy. It was probably 15 minutes?

I also found recipes in which you broil them (watch them and flip them half way through) or pan-fry them.

Your stuffed mushrooms sound great, too! Mushrooms and wine are my not-so-secret ingredients for really good stew. Lots of umami goodness, especially if it's tomato based.

Beef bourguignon...my version made with sauteed onions, carrots, celery, a bit of juice from canned tomatoes and without wine (didn't have any and DH doesn't tend to like it). Sides of mashed cauliflower and roasted Brussels sprouts. I love this WOE!

Edited to note: I didn't eat any of the carrots...they've never been a favorite, but DH likes them.
