Wink My first meat loaf

The previous post reminded me of the first time I ever made meat loaf. I was a newlywed and had several meatloaf recipes, so I decided to combine them all. This was not a good idea, it was soooo bad we threw it out pan and all. I will always follow a recipe, at least one at a time.

I always liked this 1 and not too many ingredients

6 servings 2 carbs
1 hour 40 minutes 10 mins prep

8 slices turkey bacon
2 lbs ground beef
1 lb pork sausage
1/4 cup wheat germ
1/4 cup flaxseed milled
2 eggs, slightly beaten
2 cloves garlic, minced

1. Line loaf pan with bacon.
2. Mix all the rest of the ingredients together.
3. Place mixture into bacon-lined loaf pan.
4. Bake for 1 1/2 to 1 3/4 hours in a 350 degree oven.

any sub for breadcrumbs will work
I have even made my own breadcrumbs out of LC bread
pork rinds
LC crackers

but flaxseed is available at many grocery stores and wal-marts

I threw together some ground beef, lamb, and pork sasauge. Added about 2 eggs and some ground pork rinds, along with pepper, salt, rose mary, garlic powder and dried minced onion. I mushed it all together, then put in a loaf pan. Topped with LC katchup then placed bacon across the top. Cooked in oven at 350 for 40 mins.

Drained off excess fat and served. The kids went nuts over it and ate all thier food for once.
