Default Stewed Tomatoes

I was craving stewed tomatoes like my Mom use to make, slightly sweet and thickened with bread. Well, now that I can't eat bread, I had to improvise. I came up with this recipe, my husband and I both think it is pretty darn good.

Stewed Tomatoes

1 onion, chopped
1 green pepper, chopped
3 tablespoons butter
1 can whole tomatoes, cut in chunks
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup pork rinds, finely chopped
2 pkts. Splenda

Saute the onion and green pepper in the butter until onions are transparent. Stir in the remaining ingredients. Simmer over very low heat for up to 30 minutes, until most of the liquid is gone. If too thin, cook and stir until thickened.
