Default Easy Cheese Squash Bake

I have been eating this my whole life, and it never before occurred to me it could be low carb.

It is very simple: you pick a few mixed veggies (I typically use 2 zuccini, one yellow squash, about 1/4 red onion, but you could use some carrot, some turnip, daikon, any veggie that grates easily).

Grate all the veggies into a non-stick frying pan. Saute in real butter with salt and pepper until it is cooked. Melt a bit of butter in the bottom of a casserole dish. When the saute is finished, transfer the cooked veggies into the casserole dish. Top with shredded cheese to form a full layer of cheese. (I've used pepper jack, cheddar, mozerella, really anything you want.)

Bake in 325 oven until hot and bubbly on top. You can brown a bit under the broiler if you like your cheese browned.

This is so yummy. A great way for fat, protein and veggies for times when you are sick of meat and salad. It can be a full meal or a side dish. And people not doing LC love this as well.

Like I said, feel free to experiment with the various veggies. In my pre-LC days, I would mix potato, onion, carrot and squash. But it is just as good without the potato or carrot.

Thank you!! I just got a boatload of zucchini and yellow squash from a co-worker & was wondering how I could use it all!! This sounds DELISH!
