Default armadillo eggs

I was missing my jalapeno poppers so I used these as a substitution. I made them for a friend's birthday yesterday and they went over really well.

You'll need fresh jalapenos from the produce section. Cut them in half the long way. Scoop the seeds out of them making sure not to touch with your fingers. They'll burn your skin. I coat my hands with vegi oil for protection. Fill the jalapeno halves with cream cheese. Wrap each half with a 1/2 piece of bacon. Stick with tooth picks and put on cookie sheet. Bake in oven (I think at about 325) until bacon looks cooked.

These are our families favorite. You just have to be careful because they are very addictive. One taste and you're hooked. When you seed the peppers also take out the white veins so they are not too spicy unless you like spice. Blessings, Maureen
