Default my Banana Muffins

My first success at creating something. At least I think I did!

Banana Muffins - makes 6 muffins

1 1/2 Cups Almond Flour
3 Eggs Beaten
3 Ounces Banana (mashed)
15 Drops Sweetz Free
1 1/2 Teaspoons Baking Powder
2 Ounces Walnuts (chopped)

Preheat oven to 400. Spray muffin tin with non stick spray. Mix all ingredients til blended. Spoon equal ammounts into muffin tin & bake for 14 - 16 minutes.

I am sure you could make more batter & put this in a bread tin to make banana bread.

carb count is:

6.3 grams of carbs per muffin

almond flour - 18 carbs
eggs - 2 carbs
banana - 12 carbs
baking powder - 2 carbs
walnuts - 4 carbs

*please correct me if these counts are not correct!!

I wonder if you can use a bit less banana and a bit of banana extract to punch up the flavour and cut the carbs?

Looks like a nice base recipe, think i will give it a try.

I tried making them will ALL banana flavoring and I didn't like it. Let me know how it does with less banana with the flavoring.
