Thumbs up Spicy Mexican Beef & Cabbage Soup

1 lb ground beef (22% or less fat)
1 Tbs canola or olive oil
1/2 onion chopped
2 garlic cloves pressed
4 cups beef broth (I used 1 T "Better Than Boullion" and water)
1 10 oz can tomatoes with green chilies
2 tsp dried oregano
1/2 tsp smoked sweet paprika
1/2 tsp cumin
1/3 cabbage, shredded
chopped cilantro
sour cream (optional)

Brown ground beef. Add onion and garlic about halfway through the browning. Add spices, stir 1 min. Add broth, tomatoes and cabbage. Cover, bring to a boil, then lower heat and simmer for 20 min (or use a pressure cooker, bring to high pressure and cook for 10 min.)

Ladle into bowls and garnish with cilantro. If you like, add a dollop of sour cream.

I've been trying to figure out how to use this can of Spanish smoked paprika that's been in my pantry. It works great in this soup! It's also good in chili, spice rubs.

I love spicy foods. This would be great for lunch, I am getting tired of the same old foods every day, this may spice things up! Thanks for sharing.

I bought mine at Bristol Farms, in South Pasadena CA, but you can always mailorder it.

It is very strongly flavored, like chili powder. I have substituted a portion of chili powder for this and had great results.
