Default Pinto Beans

On SBD they allow 1/3 to 1/2 cup of beans per day as a vegetable. Here's our favorite way to eat them.
*************

1/2 lb. dry pinto beans
1 envelope Ham flavoring ( I use Goya)
1/2 yellow onion chopped
1/2 green pepper chopped

Rinse beans and place in 4 qt. pan. Cover with water plus 1 inch more. Soak 24 hours.

Re-rinse beans cover with water plus 1 inch again. Bring to a rolling boil. Reduce heat to low. Cover pot and simmer for 2 hours. Add boiling water if needed to keep beans under liquid.

Test beans at 2 hours. They should be firm but not hard.

Add seasoning, pepper, onion and simmer 1/2 hour more. Salt and pepper to taste.
