Caesar salad in ~10 minutes (I swear)
Dressing:
4 TBSP olive oil
1 TBSP white wine vinegar
1 TBSP mayonnaise
1 TBSP our cream
1 tsp Dijon mustard
1 tsp Worchestershire sauce
1/2 tsp salt (more or less to taste)
1 small clove garlic, pressed
Freshly ground pepper to taste
1 head of romaine, torn or cut (I cut), washed and dried.
1/2 cup or more finely grated Parmesan cheese (or more, I like more)
Whisk together dressing ingredients and let stand while you wash and dry the lettuce. Of course, this takes me less time because I have a salad spinner, but if you don't, I recommend wrapping the lettuce in several pieces of paper towel and putting it inside a plastic bag, then giving it a good shake.
Place the salad in a bowl, toss in the dressing, cover with the cheese and stir gently to mix.
My husband always makes this huge production out of making Caesar, making croutons (which I don't like), coddling the egg, rubbing the bowl with garlic, et cetera. He acts surprised every time I make this, and my 3-yr-old daughter is in the kitchen right now asking for more.
