I love Indian food but hubby cannot bear the smell if I cook it myself from scratch plus the spices and stuff work out quite expensive so I used to buy ASDA take away curries and stuff to bang in the microwave when I fancied an Indian meal.
On Friday I was shopping and found an ASDA Chosen by You prepared chicken dish called Lime & Coriander Chicken - only 2.8 carbs for the whole 400g - absolutely delicious.
I grated some cauliflower into small 'rice' like bits and sauteed in a bit of butter and had it like a curry and rice dish.
That sounds delicious. I've been having a hankering for curried chicken with veggies. Thanks for reminding me I can have cauliflower in lieu of rice (which I don't even particularly like).
I have never tried doing cauliflower that way before but I just happened to read it in a low carb recipe book I picked up - I really enjoyed it Liz - just makes a change to cook things a bit differently, stops the boredom setting in
Thanks for the headsup, Steph! I always assume ready meals will be too carby so don't even look at them when shopping. Nice to know there are some around that would be OK.
For the US folks, I saw some frozen Palak Paneer (like saag paneer, spinach and cheese in a creamy sauce) at Trader Joe's the other day. It was only 5 carbs per serving as I recall and would make a nice accompaniment to a tandoori type chicken. I wasn't going right home so I didn't buy it, but will keep it in mind for another time.
