vegaskelly, thanks for posting these recipes! My husband has been going crazy that we don't "cook" anymore and these recipes should be right up his alley! Keep posting! It's better to hear from someone who's actually tried them than a cookbook!

Made the low-carb lasagna this weekend...YUMMO!! It was great and I have leftovers for the week and I will most likely vaccum pack & freeze a few pieces.

I have to ask about this "rice". I am not a fan of cauliflower and am hesitant to try this. But if there is anyone else out there that doesn't like cauliflower, but likes it like this, please let me know.

If you go back to the post where Vegas Kelly has posted the picture of her low carb lasagna, you'll see the words, "low carb lasagna" underlined. Just click on that, and you'll come to the nutrition page. There is a link to "view recipe" there.

Default Low Carb Taco Casserole

Ingredients


2 lb Ground Turkey
2 tbsp Taco Seasoning
1 cup Salsa
16 oz Cottage Cheese
8 oz Cheddar Cheese (shredded)



Instructions


Preheat the oven to 400 degrees
Brown the ground meat and taco seasoning in a fry pan, breaking up the chucks of meat until cooked through.
In a large bowl mix cottage cheese, salsa, and 1 cup of the cheddar cheese. Set aside.
Add the ground meat to the bottom of an 11 x 13 casserole dish and spread evenly. Spread cheese and salsa mix on top of the meat and sprinkle the remaining cheese on top.
Place the casserole dish in the oven and bake for 15 - 20 minutes until cooked through and the cheese is hot and bubbly.
