Default Mark Bittman on plant-based "meat" .. food of the future, or just another junk food?

I don't agree with Bittman's well-known position that we should be eating mostly plants and some meat "but not too much". However, I do agree that the meat we eat should be responsibly raised and that our diets overall should be minimally processed, whether plant- or animal-based. These "impossible" meat analogs and their ilk are little more than highly processed junk

And a nod to the fact that plants don't provide the satisfying and satiating taste of meat, so they manufacture a plant concoction to emulate the qualities of meat in a meatless package. Processed is processed, particularly the stuff that doesn't contain animal products.
