Actually, here in Canada it's hard to get a lot of low-carb products also. Many of us have found that we can manage quite well without them. One thing that I do use is why protein powder and soy protein isolate, available at most health food stores and some pharmacies (chemists). I use these (not very often, though) for pancakes and other 'bready' things.
Other supplies you can probably find locally in health food stores are soy flour, nut flours, nut butters, flax seed, TVP (texturized vegetable protein), and other LC 'staples.'
I hear it is difficult to buy Splenda in the UK, which might be a problem.
I'm not trying to discourage you from trying the US LC products if you want to, but maybe these ideas will hold you over in the meantime.
