Default Curried tuna salad: serves 1

Mix:

1-2 tablespoons mayonnaise
1-2 tablespoons cream or water
1-2 teaspoons curry powder

Add:

1 can tuna
chopped red pepper - (1/4 pepper or more)

Mix and serve on a bed of fresh green salad leaves.

(Optional additions could be 1/2 chopped avocado or other vegetables. Once you're onto beans, 1 tblsp of butter beans or similar makes it more filling.)

You are on a role! I love curry!! When you say cream...do you think sour cream would work or do you need heavy whipping cream?

Blackstone - Just make it with water. I made it tonight with only water, and in all honesty, it was still good - just slightly less "rich". Remember that you're adding all that tuna and the sweetness of the pepper, so the cream isn't significant. I just add it to dilute the mayo so it's not too sickly. I'm not sure about the sour cream, though - it would change the taste. You could try making a tiny bit of the curry dressing with the soured cream, and if you don't like it then just make it with water. It would be fine with milk too, but that's not Atkins-friendly.
