This is a great way to have jicama. The spice blend artfully disguises the sweet qualiaty that jicama naturally has. I plan on trying this fry method on turnip fries, zucchini, yellow squash and maybe even okra too! Should be good on all of those!
Man, I tried these on a whim and they were FANTASTIC! The spice in the coating took away the sweet edge jicama has. And the coating really browned nicely and stayed crispy even as the fries cooled off. Even picky hubby gave these a thumbs up, and at first, he wasn’t even going to taste them!
Preheat oven to 450º. Cut jicama and place in bowl. Brush well with mayonnaise. Crush pork rinds in processor/blender. Add spice Blend to pork rinds. Now sprinkle pork rind crumbs over the jicama slices, tossing lightly to coat well. Place on oiled or non-stick baking sheet. Bake for 20 minutes until tops are nicely browned. No need to turn. Bottoms will be even browner than tops!

Have you every worked with the celery root? I read somewhere that it's a great subsitute for french fries.
I haven't yet, as I don't see it in our two grocery stores very often. But we have a brand new Natural Grocery that just opened up this month and I noticed they have it. I'm going to give it a try one of these days. I've heard it is good for a potato sub in some dishes. Looks so awful in teh raw stage, but once peeled is pretty & white like jicama in all the pictures I see of it.
I'm not either, mb4n, but these "bakers" really don't taste at all like turnip! I just don't eat the peeling (which retains the turnip taste) and I swear these taste just like a red potato!
