Default Crustless mini-quiches - 1.5 carbs each

Crustless Mini Quiches

8 slices bacon
1 onion, diced (medium size)
8 eggs
1/4 tsp. dried thyme (I add extra thyme...yummy)
salt and pepper, to taste
2 Tbsp. heavy cream
1 cup cheddar, shredded (I sometimes add more if I'm feeling really cheesy.)

Brown bacon in skillet. Drain grease.
Add onions to bacon and saute until translucent.
Remove from heat and set aside. (to let them cool)

Beat eggs, thyme, cream, salt and pepper together in large bowl. Fold in cheese.

Grease your muffin pans!

Add some bacon and onions to each muffin cup.
Top each muffin cup with the egg mixture.

Cook for 15 to 20 minutes at 350 degrees - or until the tops of the quiches are golden brown! (My oven can sometimes be faster than others.) The quiches will also look a little 'poofy' when they are done, but they will settle shortly after you take them out of the oven.

Makes 12 muffins.

Freeze them and nuke them in the microwave for 30 seconds for a fast breakfast.

You can also substitute the bacon with ham and it tastes great, too!

Nutritional Information for Mini Quiches, per muffin
Calories: 131
Fat: 10
Carbs: 1.5
Protein: 8.3

I did not subtract fiber from carbs. This is total carb count.

This is similar to the 'egg mock-muffin' you'll find in a long thread started years ago, but that one uses sausage instead of bacon. This sounds pretty good! Thanks for sharing.

I'm glad you liked them.
My hubby finds them to be perfect for breakfast. He doesn't have a lot of time, so I freeze them in little baggies. In the morning he just tosses two mini quiches in the microwave for about 45 seconds to one minute. Voila!

I know this was posted a few years back, but thanks for the recipe! Tried it today and it's delicious. I had a few minor alterations though... I didn't have Thyme on it's own so I added dried Herbes De Provence (savory, fennel, basil, and thyme), and I also included 4 medium sized shiitake mushrooms (sliced thinly then sauteed with the onions), tasted fabulous!

I make mine with bacon, swiss, and caramel onions, or ham, cheddar, garlic, and chive. I'm thinking of doing a tomato basil salami one...

Ooooh. Looks yummy. I have a dozen eggs and some manchego cheese I need to get creative with...Will try these later today.
Will let you know how they turn out...I'm not much good at baking things but these look super easy.

They are so easy!
This is actually my quiche recipe that I used to prepare with pie crusts and all the other high-carb stuff. I subbed out the ingredients and experimented with making them 'crustless' and by using the muffin pans I'm able to get a 'crust' on them without the actual pie dough.

For me though...anything with onions, bacon, eggs and cheese....I'm ALL OVER THAT!

I whipped up a quick batch. Oh, my goodness. They turned out fabulous even without the bacon. (II was too lazy to fry some up).
I used a mix of manchego and cheddar, some green onions, mushroom, cream and the eggs of course and seaoned them with parsley, salt and pepper...
Next batch I will add the bacon. It took literally three minutes to mix them up. I will start keeping a batch on hand for afternoon snacks!
