Default Lunchbox + Southbeach diet == HELP!

So, my fiance & I are starting southbeach this saturday - we've been on Atkin's before, and then when I got pregnant, he kind of did his own thing and I did a lower-carb thing, but now that I am borderline gestational diabetes, I'm going on SB and he's coming with me.

My issue is, with menu planning, he works outside & carries a lunchbox (the nice insulated ones, but still, they only keep things cold, no microwave is around, etc), and I don't know what really to make him that isn't just a salad, every day.

I'm looking into trying to make some of those turkey wraps into meals, and some salads, but I'm having a hard time finding any kinds of assortment of ideas out there.

Is anyone else in this same situation? Do any of you ladies & gents have any ideas for things that are phase1 appropriate, that are good cold, and will fill a manly man up?

Hi Alden and Welcome to the Beach!!

You can make a big pot of Turkey chili and send that in his lunch box some days. In a thermos of course to keep it warm.

You can make him wraps wrapped in romaine leaves....no bread of course!!

Have you reviewed that updated good lists and meal plan charts?

Congrats on being pregnant!!

Fritatta options are endless (eggs with whatever kind of veggies, meat & cheese you like) and are great because they are good either hot or cold.

If he likes hummus that is good with some assorted veggies and maybe a cheese stick on the side.

We've got all 3 of these on the menu, the fritatta more-so for breakfast than lunch, but I'll try that also.

Had planned on turkey chili because it's filling and yummy.

Thanks for the feedback - other ideas are still welcome

I take my lunch everyday.... and sometimes I heat it but mostly not. Here's some of my "staples"

-ham and cheese rolls (just roll a slice of ham around a small slice of cheese, (turkey works too...)
-chicken salad (made with chicken, mayo, onion, green pepper, celery, dill weed, s/p) and use cucumber slices to scoop it up.
-Leftover Grilled Hamburger (I like these cold as much as heated actually).
-Leftover grilled chicken (again, like them cold)
-DELUXE salads. Lettuce, spinach, hb egg, cheese, zucchini, raddishes, onion, and then usually some leftover grilled meat (steak is my favorite, but also chicken, or even pork chop). And usualy evoo/vinegar for dressing. (sometimes even just some fresh lemon juice)
-apples seem to be really filling to me.... I realize this would be 'phase 2' but if I add an apple to any of the above, I'm sure to be FULL!

Awesome, thanks Camelle. Some of those I was planning on trying, others I hadn't. I know he'll love the ham & cheese rolls, because that's the kind of stuff he's used to (he likes Atkins a lot more than SB).
