I got a craving tonight for the low-carb-friendly salads down at the Risotteria on Bleecker Street here in Manhattan, but didn't feel like trekking all the way down there. In lieu of that, I went to the grocery store to try and fake my own. This was easy and DELICIOUS.
Mixed greens (mesclun blend)
Truffle oil (I couldn't find it in the neighborhood and used almond oil)
Sliced fresh deli meat (I used roast chicken)
Fresh goat cheese
1. Fill the bowl with salad greens
2. Add enough oil to coat the greens
3. Add slices of meat to your preference
4. Top off with a dollop of goat cheese
This tasted SO GOOD, just as good as the Risotteria's beloved salads. I personally am not a vinaigrette fan, so I usually have trouble finding salads I like. This was rich, filling, tasty, and low-carb!
