Sorry, I've been dealing with a few health issues lately and didn't see you question earlier. It's my understanding that almost anyone who does wedding cakes, will do one with artificial sweeteners although some of the hard icing decorations may have to be done with sugar for the texture. I don't think anyone really eats those hard roses and things anyway! There's also a gluten-free bakery at the Stadacona Centre, Fort St at five corners, but I don't know if they do wedding cakes.
