There is a recipe for Homemade Low Carb Tortillas in the Bread & Baked goods forum that calls for Masa flour. Someone did ask the question "what is masa flour" in that thread, but there was no reply. (I did a search but got no results)
Masa, aka masa harina is the flour used to make corn chips and corn tortillas as well as tamales. You can read more about it here: Masa Harina. It's not the same as corn starch.
Very interesting. I think I've seen some somewhere in my searches for low carb products. I have a feeling though, that if this is corn flour - it's NOT low carb - right?
I just answered my own last question. According to the USDA Nutrient Lab, there are 87 grams of carbs and 11 grams fibre (for an ECC of 76) in 1 cup of masa flour.
