Cheese stuffed meatballs
These are so good! My children love them and it's a super easy dish to make!
I got this recipe originally from Carbohydrate Addicts Cookbook, but I tweaked it a bit and I think it comes out much better.
8 oz. ground beef, turkey, or pork
4 oz. cheese cubed (we've used both chedder and pepperjack)
2 tbsp. chopped onions (or 1 tbsp. of dried onion flakes)
1tbsp. almond flour (ground up almonds...you can make this you don't have to buy it!)
Now I season with different seasonings depending on how spicy we want it that night. You can use just garlic salt (or powder if you're cutting salt), steak seasoning, oregano, emeril's essence, really anything.
Preheat oven to 325F. Mix the meat with seasonings, almond flour, and onion (I added the almond flour as the original recipe was a little crumbly, it also had soy sauce in it which I don't care for. The flour made them turn out perfectly!) Form meat around each cheese cube into a ball about the size of a golf ball. ( You can skillet fry these, but I suggest baking them as it comes out alot better. ) Place on a lightly greased baking pan (spray with olive oil or pam). Bake for about 30 minutes. This makes about 8 meatballs, you can adjust the recipe to make more as you like. Don't worry about the seasonings, just experiment and you'll get something great!
