Default Breakfast idea: Not fried chicken on waffles...

But leftover poached chicken on coconut flour pancakes. Delicious! Topped off with sugar free maple syrup. Yum!

No Mr. Wonderful in Southern CA or Southern Ontario?
Probably no BoJangles for the biscuit version either?
Deprived of true Southern cooking.

Trader Jo's has coconut flour now, must use it more, thanks for the pancake recipe.

Pancakes don't need a recipe. Just mix your flour with some baking soda (1 tsp usually works) and then add eggs. More eggs if you're working with coconut flour because it needs them. I also add a bit of salt to the batter. For coconut flour, let it set a while and soak up some of the moisture. You might need more eggs, or add more liquid (water, almond milk, whatever).

I've never used coconut flour, but this idea is truly inspiring. So many possible sweet or savoury applications! I'm curious though, does the pancake end up with a strong coconut flavour, or is it more on the subtle side?

there is definitely some coconut flavor, but i think it's pleasant- it is also denser!
i find it to be a lot like a pound cake- but absolutely love it! i serve it with strawberry syrup (nuke strawberries with a bit of splenda or truvia) and then mash with fork a bit. yum!
(you can use any type berry for the syrup)

I don't really taste the coconut in coconut flour. I think because it is defatted and most of the flavor goes with the fat. I also usually mix other things in as well so whatever coconut flavor is left is masked.
