hey Julie

That doesn't sound like leftovers .. sounds more like planovers

Cooked turkey is so versatile .. not just soup from the carass and scraps, or salad, as Meme#1 mentioned. Here are some excellent low-carb, high-fat recipes for leftover turkey .. http://www.ibreatheimhungry.com/201...ecipes-for.html

Enjoy

Doreen

Very true Doreen - we make lots of stuff with leftover (and planned-over) turkey.

Mock turnip poutine on Friday!

Happy Belated Thanksgiving! My dad didn't want to cook, so we just met at a restaurant - Amsterdam Brew House in Toronto. They do a "chop salad" - it's really finely chopped, almost reminds me of tabbouleh, and it's fantastic. Had it with grilled chicken.

Glendarc will laugh herself silly that I was asked for a recipe..... She knows I hate to cook! I invented this myself one day.

Mock Poutine

Julienne cut the turnips and bake in oven until al dente (parchment paper and olive oil makes quick clean up)

Dice turkey (warm up)

Grate cheese (or use cheese curds)

Turkey broth, spices (cayenne, Hym salt, ground pepper, turmeric) and no-starch thickener makes the gravy (can't remember the name of the stuff I have)

I sometimes "cheat" and buy a low carb gravy mix from the dollar store and mix that with bone broth.

Place turnips on plate, add turkey, cheese (or curds) and gravy.

Too easy!

Nutritional info depends on how much of each ingredient you use. I also use sweet potatoes or yams sometimes to mix it up.
