Default Hot Pumpkin *Cereal*

Hot Pumpkin *Cereal*

(not really cereal I suppose, more like a warm, creamy, pumpkin pie filling type thing. I eat it for breakfast most mornings in the fall and winter when I am missing oatmeal etc)

1/4 cup canned pumpkin
1 Tbs almond flour
1 Tbs half and half (or 2, depends on how thick you like it)
1 Tbs SF vanilla or maple syrup (or more, amount depends on how sweet you like it)
Dash of pumpkin pie spice or plain cinnamon

Nuke until warm, top with 1 Tbs butter.

Made with 1 Tbs half and half the counts come out to 4 net carbs and 186 calories.

**Excellent with a Tbs of chopped walnuts too. Changes the carb count to 5 net, calories 235.

Default almond flour?

I've gotten everything for this recipe from the store but the almond flour. I've been to 2 local supermarkets and wal-mart trying to find it. Do I need to go to a health store to find this, or is there something I can substitute in it's place?

if you have any almonds in the house you could make it yourself, since it's such a small amount...almonds actually expand a bit when you blend them so mesure for that, then blend until it has a floury gritty consistency (not too long or it will become more like butter)...I imagine the almond flour gives this pumpkin "cereal" that sort of Ralston-grainy texture a lot of us miss...
I think you may need to go to a health store or just a whole foods store to find almond flour...it's a common lc ingredient in baking because it's so low carb...you can make pound cakes, cookies, even scones, etc. with it...in most recipes however it does not subsitute cup for cup for wheat flour so I usually use almond flour low carb recipes I find on the net...
almond flour is somewhat expensive, but worth it for when you want to make a dessert you can go to town on...
it is generally sold in small bags for about 6.00...

heck, I think you could just crush a T. of any kind of lc nuts and that would taste good too...

I get my almond flour at my local grocery store, it's jut finely chopped almonds. You can also order it online, and it freezes well.

Wow, was this stuff good. I've never been a big breakfast eater (mostly because I'm a night worker so I don't get up till after noon, hehe) but as easy and tasty as this is, I will be now. Thanks for this recipe.


P.S. My local nutrition store had almond mash. Worked great.

ground filberts (hazelnuts) or pecans are also delish for this recipies...topped with some SF caramel syrup or maple syrup = WAY too yummy for my own good!!

I was looking for something different....and I found it! This is so good...I mashed up some slivered almonds and added it to the other stuff. It is a great sweet treat...for breakfast or a snack... Also, it is easy to throw all the stuff together and bring it to work and have it when I get hungry...

I made a modified version of this recipe (and the mock cream of wheat recipe). It is a little creamier, and more hot cereal-like, IMO.

1/4cup pumpkin
1/4cup ricotta cheese
1 egg
1 Tb half&half or heavy cream
1 Tb SF DaVinci vanilla syrup (or sweetener of your choice)
sprinkle of pumpkin pie spice or cinnamon

Mix all together and microwave for about 1 minute, stir and microwave for another 30 seconds. Stir again before serving.

It's that time of year to resurrect this thread.

I tried this for breakfast this morning. I added a bit of Sugar Twin Brown Sugar and it was really delicious. I was sad when my bowl was empty.
