Candice's Low Carb Mild Chili/Enchilada Sauce
Yields 1 1/2 cups sauce
1 cup chicken stock(I use homemade)
1 cup water
1/4 cup mild chili powder(I use some new mexico chili powder my sister sends me from the US)
1/2 tsp garlic powder
1/8 tsp cumin powder
1 TB vegetable oil or crisco
1/2 tsp guar gum
heat oil in a small sauce pan
add spices and cook for a few seconds, do not burn
add chicken stock and 3/4 water
add 1/4 cup water to gaur gum
then mix the gaur gum into sauce
cook until reduced a little and has become a bit thicker(about 2 mins)
strain through fine mesh strainer
per 1/4 cup
