I saw that TJ's had virgin coconut oil while there today so I picked some up. I'm waiting on an order from Netrition that includes the Nutiva coconut oil. I have to say though this stuff from TJ's is pretty good. My first impression was that it was going to be creamy like mayo but it's very hard. Well duh, it's a saturated fat lol. I scraped a bit off with my finger and tasted it and it was really good. Fatty tasting but there was a nice mild coconut flavor. So I got braver and used 1/2 tablespoon to scramble some eggs in. OMG, the smell of heating coconut oil was so amazing. My house smelled great! There was an ever so subtle taste and scent of coconut in my eggs but it was really really faint. They tasted delicious!
Next I'm going to try another 1/2 tablespoon in my coffee with heavy cream. And I can only imagine how great it would be in low carb macaroons or a MIM! Yum!

I love the smell of coconut oil, but hate it in cooked foods, like eggs. LOL! I know I'm weird that way. I've put it in tea and love it! I've made coconut bark and that is some wonderful stuff. I could walk around the house all day sniffing the jar! I don't think I'm that weird.
