Post Pink "Potato" Pancakes

I developed these this evening. Not bad, if I do say so myself.

Pink "potato" pancakes

Recipe By :Constance M. Cole
Serving Size : 8 pancakes
Categories : Side Dishes

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 cups daikon -- shredded
3/4 cup mozzarella cheese, part skim milk -- shredded
2 eggs
1 teaspoon smoked paprika
3 Tablespoons unflavored whey powder

Shred daikon. Put in colandar with a weight to drain.

Combine ingredients.

Scoop mixture into hot oiled frying pan.

Fry until brown around the edges; turn and cook other side.

Description: "A low carb version of Latkes"

Per Serving (excluding unknown items): 53 Calories; 3g Fat (50.7% calories from fat); 5g Protein; 2g Carbohydrate; 1g Dietary Fiber; 52mg Cholesterol; 77mg Sodium. Exchanges: 0 Grain(Starch); 1/2 Lean Meat; 1/2 Vegetable; 0 Fat.

Serving Ideas : Serve with sour cream or choice of condiments.
Could probably be used as a type of frittata, pressed into a pan and baked.
