Default Chocolate "Lava" Flax Muffin by LisaB

This makes a gooey chocolaty muffin-kind of reminds me of the chocolate "lava" or "volcano" cakes.

Chocolate Lava Flax Muffin ala LisaB
1-2 tsp coconut oil or butter
1/4 c flaxmeal
1 tbl cocoa powder
1/2 tsp baking powder
1 egg
2 tbl Toranis Chocolate Macadamia Nut syrup (can omit & use 1 pkt Splenda)
Splenda to taste if needed
1 sqaure 85% Lindt Dark Chocolate

Melt the CO in a large oversize mug-approximately 20 secs in microwave. Add 1/4 c flaxmeal, 1 egg, 1 tbl cocoa powder, 1/2 tsp baking powder, 2 tbls sf syrup and mix well. Taste and adjust sweetness if needed. Before nuking float the one square of the dark chocolate in the middle of the batter. Nuke for 1 minute (depends on microwave). Top should not look dried out but a little shiny or wet. Immediately turn out and clean your mug. I like to top mine with a little cream cheese sometimes sweetened w/same sf syrup.

Lisa - what's your carb count for this? Sounds positively YUMMY!!! I love these muffin/cake things!

If you count the carbs for the flaxmeal its 4.41 carbs if you don't 3.41. This includes the baking powder count and the chocolate count-if you add Splenda add 1 carb per pkt.

This was good and super filling. I finished half.

My carb count using My P.L.A.N. was just over 5 net carbs. (14.86 total and 9.8 fiber). Most of that comes from the flaxseeds.

Are you using the counts for flaxseeds or flaxmeal? The counts will be different.

I use the count for flaxseeds, but I weigh my flaxmeal. For example, 2 tablespoons of flaxmeal is 13 grams, so I enter 13 grams of flaxseeds on My P.L.A.N.
