Unhappy Flax Zucchini Loaf good and the bad

Wile playing in the kitched I modified a Muffin Recipe with good results, well sort of, here is the recipe

1 cup Soy Flour
1 cup gloden flax meal
1 1/2 Carb Quick
1 ( large) cup of Zucchini
pintch of salt
3/4 cup splenda
nice dash of cinnamon
Sprinkle of baking soda
2 tea spoons of vanilla
dash of ground pecan flour
1/4 cup of heavy cream
2 tablespoon of butter
2 teaspoons of olive oil
3 eggs

Mix dry items, then mix in wet items, mix very well ( smells wonderful), add a dab of water if nessary, bake 350 untill a tooth pick comes out clean,

Taste is wonderful, moist, yummy Now the Bad, I ate way to much, rest of the family ( non LC'er) loved it also.
