Default Cauliflower salad

head cooked cauliflower chopped into bite-sized pieces
3 boiled eggs
1/2 onion, chopped
some red pepper in cubes (optional)
some cucumber in cubes (optional)
4 rashers of smoked bacon, cooked & chopped

Dressing:
mayo (I mix it with cream or cream cheese plus water so it's not sickly)
1/2 tsp or more of mustard

Mix the dressing ingredients, add everything else and mix together.

This recipe is adapted from a Southern Potato Salad recipe shared by gmann38059 and PilotGirl in this thread:

Really good! I add:
one sweetener packet
1 T. vinegar
1 T. dry mustard powder instead of mustard
1 T. paprika
salt and pepper

YumYum! I'm making this to take to the lake house this weekend! Sounds good to have with brats and burgers! I think some green onion and a little celery might be good too!

The green onion would be lovely, though you might want to reduce the onion already in the recipe if you add more, and the celery would add a crispy crunch.. but the sweetener, nope - not for us, lol. We tried adding a touch of sweetener the first time we made it and it was BLEH... like a cauliflower dessert.

KayeKaye, Have you actually tried the paprika and vinegar dressing with a cauliflower? It sounds great for potatoes, but I am not sure about cauliflower? Is it just as good?

Any dry/made mustard would be great. But the quantities of mustard and anything else you added would depend on how much dressing you make. I only used enough dressing to coat mine scantily, because cauliflower has a delicate flavour and I didn't want to obliterate it, so a level tsp of mustard was quite sufficient. The smoked bacon is quite salty, so we didn't actually need any extra seasoning. I guess it's a matter of adjusting the quantities to what you prefer.

Yum made this today but added 4 sausages,.made the sauce with mayo ,mustard,dill and a little sweetner.I cant believe how filling this is..i couldnt move and i only had a small bowl..will be having it tomorrow as well.

We've now simplified this as follows:

A head cooked cauliflower chopped into bite-sized pieces
3 boiled eggs
4 rashers of smoked bacon, cooked & chopped

Dressing:
3-4 tablspoons of mayo mixed with a little water
1 tsp dry mustard

Mix the cauliflower into the dressing thoroughly, then stir through the chopped bacon and eggs.
