Default Italian spinach

4 pieces of bacon
1 clove garlic
1/2 lemon
1/2 cup onion ( i use red)
1 tbsp olive oil
parmesean cheese to taste
1 bag frozen spinach

Fry up bacon in large skillet, till crisp. Add onion, and garlic, cook till soft. Add spinach. Cook till spinach wilts. Drizzle olive oil over top and lemon. Mix well. Serve with cheese on top. I mix mine in. Tastes great.

Sounds great Amber, but I have never seen 'bags' of frozen spinach. All I can get are those little boxes. How many oz in a bag, or could you compare to a bag of fresh?

Default Normally use fresh

I normally use fresh, but I just posted the recipe that way. Everytime I post it with fresh someone else asks about frozen. Anyway, the frozen bag is 16 oz. (1 Lb) or I use a bag of fresh spinach. My problem is I don't really measure anything. I just throw it in to my taste. If I use fresh spinach I use more bacon and more cheese. What ever you like the most, I would put in more of it, so you will enjoy it more. Hope that helps. Well, I overcooked the bacon AND garlic, but other than that it was great! I hate cooking with propane! I used 1/2 a bag (10 oz) of fresh spinach. Will use a little more next time, and I will also put the onions in a couple of minutes before the garlic.

Thanks, definitely a keeper! My Thai exchange student thought it was a Thai recipe!

Thanks for getting back to me on that. I'm glad you liked it and your student. I kinda thought it was greek myself. You can put any kind of cheese on it and make it whatever you want. I guess. I used feta cheese the last time I used it, so then I guess it was considered greek. I used 3 different kinds of cheese the time before that. Again, thank you for letting me know.
