It's that time of year again folks, and I need some inspiration! Time to plan for Thanksgiving ~ and this year i am hosting. I would LOVE to hear what you plan on serving/ partaking in.

I know it's coming up in a couple weeks, but it still feels like late summer to me. I can't wrap my head around it yet. I'm still eating tomatoes and basil! It's a beautiful sunny 72 degrees today.

I doubt I'll go very traditional. I got over the idea of eating that meal years ago. My favorite part was always the stuffing and I have to eat gluten-free as well as low carb now.

I'll probably look for some recipes that call for sage. Sage is an essential Thanksgiving flavor. I'll probably also indulge in some roasted root veggies; I just love them. What's on special at the local stores is a factor too. Sometimes they put duck or pheasant or another bird on sale this time of year -- those always appeal to me more than turkey. I don't care about cranberries. It takes too much sugar to make them edible and they're not that great in the end anyway.

Well, you got me Sheila. Now I have to go browse epicurious for recipes that call for sage.

What to fix for Thanksgiving? That's a good question. I'm going to roast a turkey with rice stuffing instead of bread. I love brussels sprouts with cheese sauce, so that's on my menu along with a tossed green salad, and a crustless sugar free pumpkin pie for dessert. That ought to do it. Makes me hungry to think about it. Maybe I will join Allison in browsing for some other low carb recipes to try. I'm not a very creative cook, might be fun to try something new.

While we will probably be going to my in-laws, and my MIL will make the turkey and green beans and lots of other unmentionables, this is what I plan to add to it for my husband and myself:

Deviled Eggs
Faux stuffing (recipe below - but not my recipe...got it from here years ago.)
Mashed Rutabaga
Baked sweet potato half with cinnamon sprinkled on and generous butter
Broccoli with toasted almond slices in gingered brown butter
Brussels sprouts and half of a diced carrot sautee'd in bacon grease with bacon crumbled over
LC cranberries
LC pumpkin cheesecake or pie with homemade lc whipped topping
Another LC chocolate dessert

Here's the stuffing recipe and we love it!
SAUSAGE AND HERB STUFFING
3/4 lb. turkey sausage (you may use pork breakfast sausage)
1/4 cup finely chopped celery
1/4 cup chopped red onion
2 eggs
2 cups coarsely chopped cauliflower
1/2 cup diced yellow squash
1/2 cup grated parmesan
1 Tbsp. chopped parsley leaves
3 Tbsp. chopped fresh sage leaves
3 Tbsp. chopped fresh thyme leaves
1 Tbsp. minced garlic
1/8 tsp. salt
1/8 tsp. fresh ground black pepper
Preheat oven to 350 degrees. Remove sausage from casing and crumble it into a pan over medium heat. Add the celery and onion and cook, stirring, until browned. Drain fat if necessary. Beat the eggs in a bowl. Using a spoon, mix in the sausage mixture and all the remaining ingredients. Pour the stuffing into 8 by 8-inch square baking dish and bake until hot and browned, about 30 minutes. Serve immediately.
Makes 8 servings.
Nutritional values per serving: 120 calories, 2g fat, 2g saturated fat, 3 g carbs, 1g fiber.

Toasted Spice Rub Almonds OR Thyme-Toasted Almonds OR Roasted Almonds with Rosemary Fleur de Sel OR Butter-Toasted Hazelnuts with Thyme

Calvados-Laced Squash Soup with Cinnamon and Bay Leaves (evaporated milk replaced with almond milk and coconut milk)

Endive, Radicchio, Orange Salad with Mint Vinaigrette

Turkey Confit OR Pan-Roasted Pheasant with Shiitake Mushrooms and Figs in a Chambourcin Glace

Wild Mushroom Bundles

Carrots with Shallots, Sage and Thyme OR roasted root vegetables from Bradley Ogden's cookbook

- ask someone to bring dessert and skip it myself because it won't be gluten-free (best choice) OR
- steamed persimmon pudding with tangerine curd from Bradley Ogden's cookbook, recipe somehow modified OR
- almond flour cake from a gluten-free cookbook, made with erythritol and xylitol in place of sugar

Those are all wonderful recipes. I'd love to try that sausage stuffing from Moondansyr. That sounds so good!

I'll be having a mix of people (ok...I'm having a TON of people over) for Thanksgiving, so we'll have some non-LC fare around in addition to the "good stuff"

This is my plan:

Turkey - 1 oven roasted, 1 deep fried - LC
Traditional bread stuffing for the roasted bird
Green bean casserole - LC
Broccoli cheese casserole - LC
Home made cranberry sauce with granny smith apples - LC
Mashed potatoes
Sweet potato casserole
Bisquits
Corn
Green salad - LC
Meat and cheese plate - LC
Carrots - semi LC

Desserts:
Apple Pie
Apple crisp - LC
Pavlovas with berries - LC
Pumpkin cheesecake - LC
Brownies

(then whatever else gets brought by guests...non LC I'm sure)

Great recipes! I may test out the one for green bean casserole- sounds delicious.

Tradition all the way! Sage and butter roasted turkey and gravy, LC sausage stuffing, LC cranberry relish, mashed cauli, steamed green beans, and LC pumpkin pie with nut crust and whipped cream. And I cannot wait!
