I used to use shake-n-bake and cut up chicken breast for nuggets.

I threw together a few things today and it came out very well.

2T each soy flour, wheat gluten, ground flax meal.
3T Parm cheese
2t each salt, black pepper, garlic pwdr, onion pwdr, paprika
1t each chili pwdr, accent

put in bowl and mixed with a wire whip. I used about 4T to coat 4 cut up breasts.

Could possibly use a pack or so of sweetener, and more garlic for my taste.
