Default Alfredo Sauce - P:E-Friendly

Loosely based on this recipe. Changes I made: used ultra-filtered milk, and reduced the quantity because it wouldn't have fit in my Magic Bullet. I subbed xanthan gum for cornstarch and omitted salt because I find parm cheese very salty.

3/4 c ultra-filtered skim milk (I used Fairlife)*
1/2 c 1% cottage cheese
1/4 tsp ea pepper, garlic powder
1/8 tsp ea dried basil, oregano
1/2 c dry grated parmesan cheese
pinch xanthan gum or other thickener*
salt to taste

Combine ingredients in blender, blend until smooth. Pour into saucepan, simmer until desired consistency. Adjust for thickness. Makes 4 servings.

I went overboard on the xanthan gum, using 1/4 tsp. It came out pasty, but the flavour was spot-on. It really reminds me of how I remember Classico jarred alfredo.

Nutrition per serving:
119 calories
5 g fat
4 g carb (.5 fiber)
14 g protein (!!)

*Revised: I omitted the xanthan gum, and cut the Fairlife to 1/2 cup. It was a good consistency, maybe a tad too thick. I could have added another splash. It'll depend on your brands of parmesan and cottage cheese.
