You mentioned you're following a diabetic diet. Are you actually diabetic?? If so, are you on any medication, or hoping to control blood sugar with diet alone? A low carb program will be really helpful for diabetes control, with weight loss a wonderful side effect .. If you're on medication, it's possible you may be able to go off it, but you need your dr. to keep track of that.
Yes, most dieticians are resistant to lowcarb -- on the other hand, they're not in charge in your kitchen, and ultimately your food choices are up to you.
As Wa'il pointed out, Dr. Bernstein's Diabetes Solution is a good place to start. Check out the website http://www.diabetes-normalsugars.com/ .. there are quite a few useful exerpts from his book posted online ..
