Enchilada Chicken Paillard: creamy, cheesy, indulgent
Too much cream and cheese for every-day cooking, but I thought this was a good idea for a dinner party. I haven't tried it yet, but it sounds good. I wouldn't bother with the bashing of the chicken and the oven cooking. The secret to keeping chicken tender is not over-cooking it, so cooking it through in the pan, then skipping the oven bake, and instead grilling the cheese to melt it would prevent the chicken from over-cooking, and be quicker and easier.
