Default spicy sweet chicken heaven!

This is a recipe I made up myself tonight...and I am in heaven now, it was stunning. It uses sweet potato, so fine on a paleo style diet....but everyone should try it anyway it's so good! For one hungry person....double up as appropriate:

1 chicken breast, no bone or skin, sliced into thinish slices across the grain.
About 1/3-1/2 a sweet potato, cubed and boiled till nearly tender.
!/2 a leek sliced into rings
3 button mushrooms quartered,
4-5 small broccoli florettes
a hand full of fresh spinach leaves.
2 large cloves of garlic, chopped
ground coriander powder, ground ginger powder, chilli powder, salt and pepper all to taste
butter (walnut size)
coconut oil (tsp)
coconut milk...about 1/3 of a tin (maybe 100-150ml)
a shake of hot piri piri sauce and a few shakes of lemon juice.

Saute the chicken and spices with the garlic, in the butter and coconut oil.
Add the nearly cooked sweet potato, broccoli, onion and leeks, and cook another 3-4 mins. Add the mushrooms, lemon juice, cook another minute or so, add coconut milk to form a sauce. Add piri piri to taste, salt & Pepper to taste. Cook on a good heat so it bubbles, for about 8-10 mins, adding more coconut milk if wanted. Wash the spinach and drain well, add to the chicken and veg, and stir in well (you can chop it roughly if you like) allow to cook down, then serve and love it very deeply!!

Sounds very good Hallyth, it's loaded with many of my favorite ingredients and flavors. I wonder if winter squash could substitute for the sweet potato -- similar flavor but lower in carbs.

Sounds very good. I like your idea of subbing in winter squash for the sweet potato for fewer carbs, Allison.

And why not...I was trying to get a sweetness with the spice...is winter squash like butternut squash? It looks so pretty with sweet potato!

Butternut squash is one type of winter squash.

I love sweet potatoes and yams. When I go off the rails and cheat I often eat a garnet yam with butter.
