Wink Another newbie

I joined this Forum today.

I'm 91 years old and recently ....3 years ago ....came down with Diabetes type 2. I'm trying to handle the diabetes with diet and sometimes taking glypizide before a meal ....when I know there'll be carbs involved.

I bought a large amount of Carbquik but so far am not too happy with the taste of the pancakes I made with it. I'll be trying other recipes and hope to find at least one that is satisfactory. I miss my white potatoes and sourdough bread so much.

I'll post more when I've read some of the entries on the Forum.

You can make pretty good pancakes with just eggs and cream cheese. I've also made pancakes with protein powder and eggs. You have to get a good brand, though--I bought some at WalMart once, and while the raw powder tasted normal, after cooking, there was a taint of ammonia.
