I just bought myself a spiralizer -oh what fun!!! I'm loving the zucchini noodles. Made carrot salad with it too for the family.

Do others have one of these silly gadgets, and any advice for lower carb veg? I'm actually currently doing AIP so eating far more veg than if I were chasing ketosis, but I still prefer the lower-carb side of things.

i just got one, too and LOVE it. i have discovered zucchini works WAY better than crookneck/yellow summer squash- the crook, messes it all up, and then the seeds are VERY annoying.

Lasara, Do you mean as far as being fermented?
I think that most pickles are pickled with vinegar and the sauerkraut is a natural fermented process that provides the good flora for the digestive system.

You'll need to check the nutritional info on brands of fermented pickles (Bubbies is one) to see how they compare to fermented cabbage. I don't know if vitamin differences would be due to what's in the original cucumbers and cabbage, or if fermentation does something more.

oh that is awesome, Bubbies! they use a fermented brine. http://bubbies.com my peppers are Mezzetta Deli-sliced mild pepper rings and they are in sea salt/vinager water. I'm not sure if they are even picked though they taste like they are.

The fermentation process uses no vinegar and Bubbies does not, one of the few I'm sure.

I was quite the nerd and watched a bunch of videos online before I started, so I saw the difference in straight vs curved veggies & was somewhat maniacal rejecting slightly off-kilter zucchini at the market. I also bought thicker carrots but I'm not sure how many carrots I'll do. I'm looking forward to trying an apple, because it seems to do so well with round shapes. I also bought a kohlrabi but need to make myself finish some radishes before I'll open that.

I bought from the store, sauerkraut its in brine. My question is this, I thought it should be very sour but its not. I put most in jars so it won't go bad. Think it needs to sit more?

Are the ingredients just water, cabbage and salt? That's what is in Bubbies.
If it's fermented, I think that's how it should be, not too sour.

It's those vinegar types that aren't fermented that is so sour.
That's a good idea to put it in jars. Eat some and let the rest age and make sure to keep all of the liquid so that it covers the kraut.
