Default Farmers Cheese

Can somebody help me please to understand what Farmers Cheese is?

Is it cottage, ricotta, cream, etc. I have a bread recipe and want to make it up.

Default Almond Flour Bread

This was from another web site, can't remember which.

1 pack Farmer's Cheese
1/2 stick butter at room temp
4 eggs
1 tsp baking soda
2 1/2 cups almond meal
1/2 cup Atkins or GNC bake mix
Preheat oven to 350F. Put cheese, butter, eggs and baking soda in food processor until creamy. Add almond meal and bake mix. Mix for a few seconds until everything is combined. The dough is very sticky.
Grease a bread tin well. Plop dough into pan. Bake about 50 mins until brown on top. When cool, cut loaf into about 15 slices if poss. It toasts well and makes sandwiches and great french toast.

Will try it next week.

Okay I have been everywhere to find Farmer cheese. It 'don't' seem to exist in melbourne.

Any other ideas please?

Okay, help is now required please.

Nobody has Farmer cheese, although most people I ask have heard of it. Don't know whether they are confusing it with Dairy Farmers products.

I really want to make this bread, any suggestions for what I could use in its place, or how to squeeze all the moisture out of cottage cheese. Is Quark cheese close? Could I squeeze the moisture out of cottage with a couple of tea towells?

...it is the closest
thing I have found to Farmer's Cheese...enjoy!

IMPORTANT NOTE: The buttermilk is boiled *in the carton*.

---------- Recipe via Meal-Master (tm) v8.05

Title: FARMERS CHEESE
Categories: Dairy, Misc
Yield: 1 servings

5 qt Buttermilk; low-fat KEEP IN THE CARTON
Water
Cheesecloth strainer

1. Place the five quarts of buttermilk in a non
corrosive pan; i.e. enamel or stainless steel. Pour
water at least half way up the sides of the containers
(use cardboard ones; not glass bottles). Bring to a
boil and let it go for 20 minutes. Turn of and wait
until the water is tepid.

2. Hang the cheesecloth strainer over the sink or over
a large pot. You will need help here. Pour each quart
of 'cooked' buttermilk into the strainer and let it
hang at least 12 hours. What you will have left in the
bag is a very dry cheese, similar to Farmer's cheese.

NOTE: Edith sometimes adds a bit of sugar to the
cheese. If you put it in the Food Processor and zap it
with a some milk you have a creamy spread; similar to
cream cheese. We use this in Blintzes and in place of
ricotta in some recipes. It would be wonderful if you
need Farmer's cheese and can't get it.

Lions and Tigers and Bears, oh my! I like things to be simple now, so I might try to drain cottage cheese or keep trying.

Thank you so much for doing that, I am very very grateful.

Tonight I made up the Atkins Protein bread. Ordinary, but it did allow me to have sauted mushrooms on 'toast'. And tomorrow scrambled eggs on 'toast' with bacon.

Might be worth contacting them.

You might also try using Continental style cottage cheese - it's kinda smooth compared with the "lumpiness" of normal cottage cheese. It's dryish too, from memory.

BTW, have you tried using Country Life "Alpha Life" bread? 5.1 useable carbs per slice.

Dale, I'm not sure if any of this has really been of any help, but you've got me curious about the stuff now.

Thank you so much.

I will now go to my cheese shop in Cheltenham and ask them if they can get it in.

I appreciate the 5.1g bread, but I won't give up that much for bread.

At about 1g a slice of the Almond Flour bread, if it works will be great for a change. I don't miss it much, just the times I want scrambled eggs on --- and the occasional burger (home made).
