Default LC croissant challenge?

Is there any way to make a low-carb croissant??? Or any kind of similar flaky pastry?

Just got back from France and it took all of my willpower not to eat one....or a hundred, for that matter.

Karen or any other cooking geniuses out there, what do you think? Is it possible? Anyone up for experimenting?

Hmm....been a long time since i've baked one..but i'm sure you could...they're really like 70 percent butter i think....and actually not quite as high in carbs as bread..so maybe you could convert a recipe..i'll try and see if i can come up with somethin

A lot of people use wheat protein isolate as flour. It might be a place to start.

Hmm..i'll have to try that....never seen it in the stores...but i'm sure the healthfood store here has it....next time i'm there i'll check it out and give a recipe a shot..

If any of you have the Protein Power Cookbook there's a recipe in it for Magic Rolls that taste very like my memory of croissants - very YUM! It's made like choux pastry, though and does use some plain flour, but the resulting rolls (depending on the size you choose to make them) can be as low as 3 carbs each.
