I found this recipe a couple of weeks ago and have experimented with it a little. Below is the original recipe:
1/4 C Soy flour
1T Cocoa Powder
1/4t Baking Powder
5 packets Splenda
2T Melted Butter
1T Water
1 Egg
In 2-Cup Pyrex baking dish blend well first 4 dry ingredients. Then add water, melted butter and egg.
Blend thoroughly with fork. Cover with plastic wrap, vent with small slit in center. Microwave on high 1 minute or until knife comes out clean. Eat warm, or cold. Serving size is 2. Carbs 5.5g; Fiber 2g; Sugar 1g.

Since I dont like soy flour due to gritty texture i tried some variations and came up with this:
1/4C Choc Whey Protien pwdr (Designer Whey brand)
2T Cocoa Powder
1/4t Baking Powder
1/2t Guar Gum (optional - helps w/baked goods texture)(fiber)
1/2t Salt
1/4C Erythritol (sugar alcohol - least likely to cramp tummy)
2T Melted virgin coconut oil or butter
1T Water
1 Egg
Mix as per above instructions. Serves 2
Calories 225; Fat 18.5g; Carbs 4g; Fiber 1g; Prot 12.5
(fat is based on coconut oil)
This is really good and quick to fix. It is the only recipe I have tried that comes close to having an honest to goodness cake texture. And there are those times when nothing else will do!! I love it. I hope ya'll will too.
I found this on a website that hasnt had any forum action in 2 years so I thought I would show it here.
I almost forgot, I spray a glass bowl with oil and pour into it to mw. It doesnt stick. ENJOY!!
