Default what the flaxseed is going on muffins



Ingredients:
1 C. Carbsense NO carb bake mix *8g (8g dietary fiber=0 net carbs)
1/2 C. Flaxseed Meal *16g (16g dietary fiber=0 net carbs)
10 Packets Splenda
1 tsp. Cinnamon
2 Eggs
1/4 C. Heavy Cream
1/2 C. Black Walnuts-chopped *3g
1/2 C. Water
1 tsp. Vanilla Extract
2 Tbsp. Canola Oil

makes 8 muffins 1.5g per muffin !!!



Method:
Preheat oven to 325°F
Combine all dry ingredients in a large mixing bowl. Add remaining ingredients and mix lightly until everything incorporates(batter will be very thick and does not increase in size when baking so fill cups all the way to top).spoon into 8 muffin cups (i lightly spray cups with canola oil) Bake for 25 minutes or until golden brown.

Oh but I have learned to love Flax Seed muffins. They taste great and are rocket fuel for the bowels.

Thanks for the recipe, I will give it a try. Any thoughts on using Atkins baking mix instead?

By the way, those Splenda packets add about 10 carbs to the recipe, resulting in 3 carbs per. Still great though.

You could also use liquid splenda.

Brobin,
If the Splenda adds 10 carbs to the whole recipe and it makes 8 muffins wouldn't that be a gain of 1.25g per muffin instead of 3g per muffin ?

Sorry, I mean to a total of 3 (rounding up), not an additional 3.
