Hi all,

I make this artichoke dip, which is great to take to a pot luck or a party. I figured out the breakdown of calories, carbs, fat, and protein of this tasty little dip for those of you who use fitday. I put it on pork rinds and supply nacho chips for those who aren't lowcarbers (crackers would work too or bread pieces). Anyway, here it is:

Artichoke dip:

3/4 cup mayo
1/2 cup parmesan cheese (shredded or grated)
1/2 cup shredded cheese (cheddar, mozza, or blended)
1 can of artichoke hearts, drained and loosely chopped
1 tablespoon finely chopped garlic
2 tsp tobasco (for some snap) or some green chiles for some major snap!
salt and pepper to taste

Mix all this stuff up in an oven safe shallow dish. Bake in oven at 400F for about 20 minutes until mixture gets bubbly and starts to brown nicely on top (broiler for the last 5 minutes browns the top nicely too). Then serve! It's delicious!

Breakdown for the whole dish:
Total calories: 1785
Fat: 169g
-sat fat: 44g
-poly fat: 69
-mono fat: 48g
Carbs: 28g
-fiber: 9g
Protein: 46g

If you eat, say, a fifth of this yourself**, you're looking at:
Calories: 357
Carbs: 6g
Protein: 9g
Fat: 34g (but we really don't care about that...
)
**(not including the pork rinds used for dipping, which have no carbs anyway)
