Eggs in Cookies?

I have been doing my low carb Christmas cookies and I noticed something. Most of the low carb cookies are rather crumbly. I also noticed that none of them call for eggs. When I make regular cookies, they use eggs (most do).
Would eggs not help low carb cookies develop more structure? Would it make them too hard without flour and sugar to soften them up?
I am willing to experiment (perhaps with a batch of your low carb maple walnut sandies, which I love, crumbly or not ), but I figured I would ask first in case there is a reason not to use them.
