I used to agree with Judy and others about it being a bad idea to stay at 20 g or less, but I've pretty much changed my tune. It depends on the intent behind it. If it's desperation dieting mentality - "the harder I restrict, the faster I'll get there" - yeah, that's not good. But if you've read the literature, drawn your own conclusions on how much carbohydrate we really require, you're happy with your food and you feel good, I say good on ya.
Also, it sounds like people are assuming that if you practice IF, paleo or VLC, that you do it all the time, every day. IF isn't something I do every single day; I do it when the opportunity arises. Likewise, even though my carb intake has been less than 20 g on most days for the last month or so, if I feel like having more, I go ahead and do it. I think an important part of maintainance (or OWL, I guess) is to have an understanding of the give-and-take of various foods: if you want more X, you have to cut back on Y and Z. If you want more Y, you have to cut the X and Z. You can have variety while still living by the rule, "you can have anything you want, but you can't have everything you want."
BTW, IF isn't "starvation" or "not eating all day", though some choose longer fasting periods. I find IF so easy, I just did it without thinking about it. I had dinner at 6:30 pm last night. Had a cup of herbal tea later on. Got up half an hour ago. Made a cup of tea. Don't feel like eating yet. In 8 minutes, I'll have gone 15 hours since last eating. 15 hours is the generally accepted minimum at which there seems to be benefits in terms of inflammation markers, etc.
